Culinary Arts Academy Switzerland is a private culinary school of Swiss Education Group with campuses in Le Bouveret on Lake Geneva and in Brig, both in the canton of Valais. It is not on the list of accredited Swiss higher education institutions. The three-year bachelor's with two internships costs $210,020 (CHF 175,300) at 2026 rates including housing and meals; the one-year professional diploma costs $47,920 (CHF 40,000).

"Swiss" in these diploma titles is part of the school's own naming; it does not make them federal diplomas or degrees of an accredited Swiss higher education institution. The school also lists accreditation by the American Culinary Federation, Worldchefs recognition, the Swiss eduQua quality label and membership of the Swiss Federation of Private Schools.
What the school and the University of Derby say (checked 1 October 2026). On its programme pages and its accreditation page, the academy states that the BA (Hons) in Culinary Arts and the MA in Culinary Business Management are awarded by the University of Derby. Derby's website has no page for Culinary Arts Academy. It names a BA (Hons) Culinary Arts (Top-Up), a degree-completion programme, among the Derby programmes approved to run at César Ritz Colleges (Swiss Education Group), next to two hospitality master's degrees. That Derby page opens by stating that no future cohorts will be recruited for this arrangement, and adds that Derby continues to work with Swiss Education Group through other providers. The MA in Culinary Business Management does not appear on Derby's lists for César Ritz or SHMS. The two sources do not match, and we cannot tell which is accurate for a 2027 intake. Before paying, ask the academy to confirm in writing which university awards the BA (Hons) and MA for your intake, and check it with the University of Derby if you can.
What follows from this:
- Term-time jobs and post-study job search under SEM directives depend on higher-education status, so students of a non-accredited school should not count on them.
- Further study at a university. The UK BA (Hons) is a University of Derby degree; universities treat the school's own diplomas as professional qualifications.
- A chef's career depends on kitchen experience more than on the degree title, so the one-year professional diploma with an internship is a valid route in its own right.
Who the academy suits
| A good fit if | Compare alternatives if |
|---|---|
| You want to become a chef or pastry chef and study in English | You need a degree from an accredited Swiss institution: César Ritz Colleges offers one, in hospitality rather than cooking |
| You want a one-year practical course with an internship | You need a lower budget: BHMS in Lucerne also runs a culinary bachelor's with a UK degree |
| You are drawn to pastry, bakery and chocolate | You prefer a classic French school such as Le Cordon Bleu Paris |
| Four intakes a year suit your timing | You need to study in Russian or with minimal English |

Programmes and structure
BA in Culinary Arts and BA in Pastry, Bakery & Chocolate Arts. Three years, 180 ECTS (360 UK credits):
| Year | Campus | Content | School award |
|---|---|---|---|
| 1: terms 1–3 + internship | Le Bouveret | classical cooking, garde manger, European regional cuisine, food safety, baking basics, kitchen leadership, French | Swiss Grand Diploma |
| 2: terms 4–5 + internship | Le Bouveret | fine dining, food cost, advanced pastry, restaurant service and management, wine and mixology, chocolate, applied research | Swiss Higher Diploma |
| 3: terms 6–7 | Brig | business plan, culinary tourism, marketing, accounting, F&B concepts, restaurant design | Bachelor of International Business; BA (Hons) from Derby, according to the school |
The programme includes 1,100 practical kitchen hours and about 2,376 contact hours over three years, and students run a 50-seat restaurant open to the public. Internships last six months each. According to the school, gross intern pay in Switzerland can reach $2,820 (CHF 2,350) a month; that is a ceiling, and the employer decides on hiring after an interview.
Professional Swiss Diploma in Culinary Arts or Pastry Arts. A modular programme in Le Bouveret: one term leads to a certificate, two terms plus a six-month internship to the diploma, and an optional third term to the Professional Swiss Grand Diploma. Up to 850 contact hours.
Master of Arts in Culinary Business Management. One year in Le Bouveret: two 11-week terms (food culture, leadership, revenue analysis, sustainability, strategy, innovation and AI, events and catering, marketing, business start-up), then an integrated business project and a six-month internship, with 240 kitchen hours.
Entry requirements
| Programme | Age | Education | English |
|---|---|---|---|
| BA | 18 recommended; must be 18 by the end of term 3 | completed secondary school or the SHMS Access Foundation Program; prior learning assessed individually | IELTS 5.5, TOEFL iBT 55, Duolingo 95+ |
| Professional Swiss Diploma | 17+; 18 needed for a Swiss or EU internship | secondary schooling; applicants with work experience but no school-leaving certificate are assessed case by case | IELTS 5.5 or Duolingo 95 |
| MA | 21 recommended | UK/US bachelor's (2:2 / GPA 2.6), SHMS Postgraduate Diploma with internship, or five years of managerial hospitality experience plus interview | IELTS 6.0, no part below 5.5; Duolingo not accepted |
Transferring from the diploma to the bachelor's requires a completed school-leaving certificate at first enrolment; otherwise a bridging semester applies. The master's entry rules name UK and US bachelor's degrees, so applicants with other degrees should ask for an individual assessment before applying.

Visa and residence in Valais
Russian citizens apply for a national D visa at the visa section of the Swiss Embassy in Moscow (moscow.visa@eda.admin.ch, fee RUB 8,700), which also serves residents of Belarus and Uzbekistan; residents of Kazakhstan apply in Astana. The Valais population and migration service issues the residence permit.
Valais grants a study permit when the school is approved by the canton and the programme is full-time with at least 20 hours of classes a week. You need a personal study plan naming the target qualification, a CV, the school's confirmation of your level, proof that tuition is paid and that you can cover living costs, and suitable housing. As a rule, one programme of up to eight years is allowed. Register with your commune within 14 days of arrival. Applicants aged 17 should check with the school and the canton which guardianship documents are needed. See our Swiss student visa guide.
Russian citizens should note Swiss sanctions: Article 20 of Ordinance SR 946.231.176.72 (version of 21.09.2026) bars banks from accepting deposits above CHF 100,000 from Russian nationals and residents and limits some payment services, unless the person holds a Swiss, EEA or UK residence permit. Legal payment routes are described in how to pay for studies abroad from Russia, with more in studying in Switzerland for Russian citizens.

Common mistakes
- Reading "Swiss Diploma" as a state diploma. These are the school's own awards.
- Not checking who awards the BA (Hons) for your intake. Derby lists the culinary BA (Top-Up) on its César Ritz Colleges page, which says no future cohorts will be recruited, so get written confirmation.
- Starting the bachelor's at 17 without a plan. You must be 18 by the end of term 3 to continue.
- Assuming Duolingo works for the master's. The MA needs IELTS 6.0 or an equivalent other than Duolingo.
- Counting on a term-time job. SEM directives link such permits to higher-education status, so budget only for paid internships.
Timeline for a 2027 start
- Six to eight months ahead. Choose between the one-year diploma, the bachelor's and the master's, and take IELTS 5.5 or 6.0.
- Four to five months ahead. Apply, pay CHF 150 and ask for written confirmation of the awarding university.
- Within 30 days of the letter. Pay CHF 3,000 and receive the visa document.
- Eight to twelve weeks ahead. Apply for the D visa.
- Six weeks ahead. Pay the rest of the first term and the deposit, then travel to Le Bouveret.
